Homemade Zucchini Bread

Our neighbor gave us some zucchini so I made one of our favorites.   

Zucchini Bread

3 Eggs
2 ¼ cup sugar
3 tsp. vanilla
2 caps raw zucchini, peeled and shredded
3 cups flour
¼ tsp. baking powder
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon sugar
1 cup oil
1 cup chopped nuts (optional)

Beat eggs well and add sugar, vanilla and oil. Blend well in mixer, while blending add flour, baking powder, salt, and cinnamon. Add zucchini and nuts. Flour and grease 3 small loaf pans. Pour into pans and bake at 350 degrees for 1 hour. Enjoy.

You can also wrap these and freeze for later use.
